I Can Cook! Freshocracy Update

We've been busy little bees over the last few months so have had to skip more than a handful of Freshocracy Meals. Finally, our lives settled down enough after the holidays to once more get in the groove of having fresh and delicious home-cooked meals. For your food-lusting pleasure I present:
Meal 1: Lemon Risotto with Broiled Cod Fillet
I cooked fish! And it was good! I am always nervous about cooking fish so have overcooked it the few other times I made it. This time, I just watched it carefully and after several checks of opacity got it to right. I also noticed my risotto cooking skills have improved since last time.

Meal 2: Braised Chicken Legs with Scallion Cream Potatoes
and Buttermilk Walnut Salad
I also tend to overcook chicken, but not this time. Hands down the most tender and juicy chicken ever to come out of my kitchen.

Meal 3: Pan fried Pork Chop and Spinach
with Chickpeas, Garam Masala, and Yogurt
And then there was this. The flat bread was flaky and oily and made the perfect accompaniment to the pork chop and sauce. The Mr quickly declared this one of the best things I have EVER made. It made our Friday night in every bit as special as a night out.
